8 Tbsp butter
1/2 cup of flour
4 cups of warm milk
pinch of salt
1/2 lb of cheddar cheese
1/2 lb of monterey jack cheese
1/2 lb of gruyere cheese
1lb of pasta
panko breadcrumbs


- Cook pasta and strain
- Melt butter
- Add flour and whisk until incorporated (about 2 minutes)
- Add warm milk
- Whisk on medium heat until it gets thick (this is called a roux)
- Combine pasta, cheese and roux in a large bowl until all mixed together
- Put in an ovenproof dish that is greased and top with some panic
- Bake at 375 for about 30 minutes or until lightly brown and bubbly!
